Water Chemistry
by Keith Brainard 9 Months, 1 Week ago
I have been brewing all grain for a while now, but I have never yet treated my water at all.

Lately I've been finding my pale beers a bit cholro-phenolic while my dark beers are awesome. Thus I believe I have high alkilinity in my water.

Any easy tips for battling that?

I dont know much about that but I did google a little bit. Looks like you have to do a "Reverse Osmosis" like this system does: http://www.freedrinkingwater.com/ro-45-detail.htm

I would hope there is a smaller solution out there. I know we use a water purifier but if you have alkalinity it looks like its a bit more then filtering water.

I've ben rifling through the water treatment section of John Palmer's How to Brew, and I have found that if I know concentrations of various ions, such as Bicarbonates, Magnesium, and Calcium, I can add other ions to balance the water in a suitable manner... Interesting stuff.

I've got an email into the water company asking them for the ion concentration info that was missing from my town water report.

I do filter the water with a Pur filter, but like those resources point out, that's not quite adequate. Is that FreeWater company in love with RO or what?

IMHO - Instead of screwing around with filtration systems and water reports, just cough up a few extra bucks when you brew and buy bottled water. Deer Park even provides a water report if you're that anal: http://www.nestle-watersna.com/pdf/DP_BWQR_91206.pdf

If you have pH concerns, I highly recommend this product: http://www.midwestsupplies.com/products/ProdByID.aspx?ProdID=4836

Water pH is very seldom discussed in homebrewing circles, but it can have a very dramatic effect on your efficiency and hop utilization.
